Executive Chef Clint, is a generational chef who started his career in catering at a very young age. He was inspired and influenced by his grandfather, who owned and operated a very well known catering establishment in Mellieha, watching his family working hands on, resulting in a growing passion for this industry.
Clint joined the Institute of Tourism Studies where he studied for four years focusing on Food Preparation and Production. During this period Chef Clint also managed to achieve WSIET Wines and Spirits. He was lucky to spend his first internship in the acclaimed Le Meridien London Gatwick which he describes as “an experience to remember”. It is here that Executive Chef Clint understood that catering is his life and his future. During his studies he also had a privileged opportunity to spend time at the Gavroche with acclaimed French Chef and Restaurateur, Michel Roux.
Chef Clint joined the Xara Collection nearly 20 years ago, working under the talented Chef Kevin Bonello, where he served as a mentor and guiding him to build on his creativity, skill and love for the culinary world. Throughout the years, Clint has nurtured and developed his passion for ‘Culinaria’ so much so that his talent and dedication were instrumental in achieving and maintaining the one Michelin star at de Mondion.
Now settling in his new role as Executive Chef of The Xara Palace, Clint is excited about the new prospects for the restaurants of the hotel, together with the pleasure of working with dedicated and skilled teams, who have the hunger to keep building and improving themselves, thus offering curated moments to diners.
Executive Chef Clint comment; “My goal is to take our guests on a journey around our beautiful island. My responsibility is to honour the seasons and people behind our produce. My vision is to showcase culture, history and art through gastronomy.”
