Recipe of the Month

Each month we bring you a recipe using local produce in season in collaboration with

 

Zalza tal-Bzar Ahdar – Green Pepper Sauce

3 green peppers

1 large or 2 medium onions

Olive oil

3 cloves garlic

4 tomatoes or 1 tin polpa

1 tablespoon capers

1 tablespoon white wine vinegar

1 teaspoon sugar

Chopped fresh parsley

Chopped basil

Pinch of salt and pepper

Chop and fry the onions and garlic in olive oil,  add the chopped peppers and fry a little more.  Add the chopped tomatoes, season,  add sugar and simmer until thick.  Add the capers,  vinegar, parsley and basil.  Serve hot or cold with bread or as a side.
