We’re right in the thick of summer, making it the perfect time to visit one of Malta’s breath-taking seasonal restaurants. NEBA at the Hilton is only open for a few months a year, so you definitely want to add it to your summer dining list. First of all, the atmosphere is absolutely sublime.Stepping onto the pool deck at the Hilton, you’ll see a blissful area underneath a fairylight-strewn trees, just waiting for you to have a seat. As you peruse the menu, you can lift your head up and admire the gorgeous view of the Mediterranean Sea. This is undoubtedly the perfect backdrop for a summer dining experience.

And what a dining experience it will be! A couple of minutes after you order, you’ll be served with a beautifully plated complimentary antipasto of warm bread, butter, and figged olives. This surprising combination will quite literally melt in your mouth. Then your starters will arrive. Definitely consider ordering the Duck Breast Prosciutto, served with medjool dates, pickled beetroot and fermented chilies. As for mains, the Quail Ballantine with onion garni and caramelised figs is mouth-watering. The Veal Cutlet with grilled broccoli rabe and rosemary & golden raisin agrodolce will also leave you wanting more. And speaking of more, you need to try NEBA’s ice-cream – you’ll regret it if you don’t!
