Cauliflower Fritters

 

Ingredients:

  • 1 kg of cauliflower
  • 200g of flour
  • 2 eggs
  • 2 anchovy fillets
  • Nutmeg
  • ½ teaspoon of bicarbonate
  • Oil
  • Salt

Method:

Clean the cauliflower, cut it into pieces and boil in salted water for 10 minutes. Prepare the batter, beating the eggs and flour in a bowl. Add the anchovy fillets, cut into small pieces, the nutmeg and bicarbonate. Let the batter stand for 15 minutes and then add the cauliflower. Stir gently and fry in a pan with plenty of hot oil, putting in the mixture a spoonful at a time.
