1. Could you tell us a few words about yourself and your background?

My name is Luke, and I had been working in the luxury hospitality and retail industry for over 10 years before joining Caviar & Bull as the CSR Manager. In this role, I focused on driving meaningful initiatives that promote sustainability and social responsibility. I believed that small, consistent actions could create a big impact, and I was excited to work with the team to make a positive difference for both our community and the environment.

2. What changes have you observed over the years in terms of the eating habits of your customers and consumers?

Over the years, I have noticed a remarkable shift in how people approach food and dining. Today, customers are much more conscious about what they eat, where it comes from, and its impact on the environment. What excites me most is seeing how everyone has become an ambassador for change, this is by asking the right questions, supporting sustainable practices, and driving the industry toward a more responsible future.

3. How do you see the integration of sustainability principles into the restaurant industry in the future?

I see sustainability becoming an integral part of every decision in the restaurant industry, from sourcing ingredients to managing waste. Understanding and improving the entire supply chain will be key, ensuring that products are ethically sourced, locally where possible, and that we reduce our carbon footprint at every stage. I believe restaurants will increasingly collaborate with suppliers who share these values, creating a more transparent and responsible food ecosystem.

4. Why did you choose EcoCook Sustainable Restaurant certification?

We chose the EcoCook Sustainable Restaurant certification because it provides a comprehensive framework to measure, improve, and communicate our sustainability efforts. It goes beyond surface-level initiatives and looks at the entire restaurant operation from sourcing and energy use to staff training and community impact. This allows us to set clear goals, track progress, and be transparent with our guests about the steps we are taking toward a more sustainable future.

5. How did you experience this initial audit in terms of organization and time spent?

The initial audit was a very positive experience. It was encouraging to see how many good practices we already have in place when it comes to sustainability. At the same time, it was exciting to identify areas where we can go even further, especially with the latest advancements in the sustainability sector. It gave us a clear roadmap for continuous improvement and inspired us to take our commitment to the next level.

 6. Was the diagnostic report useful? Was it easy to understand?

Yes, the diagnostic report was very useful to understand. Whenever we had questions or needed clarification, they were always promptly answered, which made the whole process smooth and informative.

7. How do you think your customers will perceive the fact that your catering services are certified EcoCook Sustainable Restaurant?

I believe our customers will see the EcoCook certification as a clear sign of our commitment to sustainability and responsible practices. It shows that we not only care about the quality of our food but also about the impact we have on the environment and our community. Many guests are increasingly conscious about the choices they make, so this certification reinforces their trust in us and aligns with their values, making our catering services even more appealing.

8. What are your next objectives?

Our next objectives are to maintain and uphold the sustainability standards we have already achieved with the EcoCook certification and build further upon it. This includes continuing to optimize our supply chain with local and ethical sourcing, reducing energy and water consumption, minimizing waste, and keeping our team and guests engaged and informed about sustainable practices. Our goal is to ensure that sustainability remains a core part of the Caviar & Bull experience, consistently creating a positive impact for both the community and the environment.
