Rosamí is one of those establishments; perched in The Villa with views of the historic Balluta Buildings and the crashing waves of Balluta Bay. The majesty extends into the menu where a carte blanche approach conducts the service giving Executive Chef Davide Marcon and Head Chef Alan Tabone free reign to create gastronomic dishes based off the produce sourced intentionally from Xara Gardens. This power-duo offers dishes that are distinctly Xara, while lacing their individual identities in certain dishes and fusing their craft together to create unique interpretations. While the menu is never quite the same; a constant feature that simply evolves with the seasons is the fish course; where a scallop farci, delicately stuffed beneath a seabream’s crispy skin; served with a luscious and velvety velouté.
